The Pancakes

What You’ll Need

Yields 12 Pancakes

  • One Cozy Crumb Dry Mix Package

  • 2 eggs

  • 1.5 cups + 3 tbsp whole milk (you can use a milk of your choice - including dairy free!)

  • 4 tbsp melted unsalted butter (if you’d like to use a dairy free butter, feel free!)

  • 2 tsp vanilla extract

  • Optional: ½ cup of toppings of your choice (chocolate chips, blueberries, strawberries, etc.)

Instructions

  • Pour the Cozy Crumb Dry Mix Package in a large mixing bowl.

  • In a separate bowl whisk together eggs, milk, butter, and vanilla extract.

  • Add 1/3 of the wet ingredients to the dry mix. Mix well until you get a smooth, thick batter. Gradually add the rest of the wet ingredients whisking continuously.

  • Mix in your preferred toppings if doing so.

  • Heat and lightly butter a skillet or frying pan over medium-high heat.

  • Drop 1/3 cup of pancake batter onto the skillet or frying pan.

  • Cook the pancake for about 2 minutes until the edges are set. Flip the pancake and cook for 2 minutes on the other side.

  • Remove pancake and place on a plate.

  • Continue this process with the rest of the batter. This recipe yields approximately 12 pancakes.

  • The pancakes are best served warm.

  • If you do not consume all pancakes they can be refrigerated for 2-3 days and reheated OR frozen for up to 4 weeks and reheated.
